Lentil Veggie Burger Recipe

These lentil and nut veggie burgers are full of flavour and make a hearty and satisfying lunch or dinner. Combining our Vinofood Indian Tomato & White Wine Sauce to add lots of flavour with our Vinofood Tomato & Riesling Relish to top it off. These have to be the best veggie burgers we have tasted! Serve by themselves with a simple garden salad or add a toasted bun and make it a burger.

 

Lentil Veggie Burger

  • 1 each onion (diced)
  • 1 each sweet potato (medium)
  • 2 each garlic cloves
  • 2 each carrots
  • 150 gm peanuts (crushed)
  • 100 gm breadcrumbs
  • 1 tin brown lentils (400gm)
  • 1/4 cup Vinofood Indian tomato & white wine sauce
  • 50 gm chia seeds
  • 1 tsp coriander (ground)
  • 1/2 tsp cumin (ground)
  • 1 tbsp olive oil
  1. Cook and mash the sweet potato. You can either peel and cook on stove in a pot of water or roast in the oven. Just cut in half (lengthways) place on a baking tray line with baking paper and roast in the oven on 200°C for approx 40 mins or until cooked through. Put aside. Once cool enough to handle scoop out the middle, discard the skins and mash.

  2. While the sweet potato is cooking heat olive oil in a fry pan and gently sautee the other veggies with the cumin and coriander until softened and cooked through.

  3. In a big bowl add the mashed sweet potato and cooked veggie mix and combine.

  4. Add all the other ingredients and mix together, combining well.

  5. Add salt and pepper to taste.

  6. Make into 4 patties and brown on each side in fry pan.

  7. Cook in oven for 10 minutes on 180°C.

  8. Top with Vinofood Tomato & Riesling Relish and serve with a simple side salad or add a toasted bun and make it a burger.
