This sauce is truly versatile, there are so many things you can do with it, both sweet and savoury. Use as a glaze for roast meats, or an alternate to plum sauce for a stir fry. It’s great with meringue and ice cream, serve with poached pears and cream or as a topping for a rich chocolate mud cake, just as we do in the restaurant.

Ingredients: Red wine, sugar, black peppercorns, arrowroot, vanilla essence, cloves, cinnamon, nutmeg, oranges, star anise, salt.
